We had heard so much about Bikini. Even strangers have told us we must try this place, so upon our return in November we booked in for dinner. The vibe was awesome the minute you were greeted at the front foyer and it continued the whole evening to the service from all the staff who served us.
Update: When we visited Bali in September, although we stayed at an all inclusive resort, we could not resist visiting this delightful place again and share the experience with our friends. And such a fantastic experience it was.
Merah Putih describe themselves as “presenting an opportunity to discover a different kind of Indonesian cuisine”. The spectacular décor of this building created a luxurious ambiance. An interesting anecdote is that the lit up spires in the restaurant are actually downpipes and the rainwater is reused throughout the impressive building. The menu was incredible, another one of these menus that made you want to try everything. We started with a couple of cocktails to help us peruse the menu. Flying to Malta from San Sebastian was a little cumbersome but options were limited so there is not much you can do about that. First to Barcelona, then check in again to another flight to Malta. When we arrived it was nearly midnight, with a plane load of people all scrambling for taxis at the same time, it seems a bit messy at that time of the night. The first time we went to Amusé was pretty much the first of many degustation experiences with my then fiancé (now the other half of The Synergist) where we were in full throttle on ticking off our food exploration list.
We had heard so much about this place and how amazing the food was so we had to give it a bash for ourselves, and bashed three times we did. As I am writing this blog in late 2017, they have now since closed. There has been talk that they are tired of running such a full on husband and wife business and may open something a little bit more casual down the track. As with all cooking inspirations, we sort of came across this dish at a restaurant and I decided to amend it to my taste. When I encountered this dish it was served with fennel and grapefruit which I felt the fennel was too aniseedy paired with the grapefruit with then made it even more tart.
So, whilst the treacle cured salmon was the main event, with a bit of novice culinary foot work I think I can still proudly serve it to our guests at Chez Brown. This dish is a great entrée in any season but since I am serving it with orange, braised fennel, rocket and goats cheese, it is a refreshing warmer weather dish. Continue Reading…
