Blue Manna Bistro, Dunsborough – June 2019

This place sprung up a few years ago in the heart of Dunsborough where it quickly earned the reputation as a place to try. We had missed trying this place until now, visiting friends who live in Dunsborough. The reason is, it is predominately seafood and my husband is not really a fan of going to seafood restaurants. Whilst I would go to good seafood restaurants at a drop of a hat due to the fact that there really isn’t many, if really any good seafood restaurants around any more…..(please, I would welcome any recommendations). European (short) Adventure – London, Madrid & Singapore April 2019

I caught wind mid last year that this year, you could take three days of annual leave and enjoy 10 days of break over the Easter and ANZAC public holiday period. So, it got me thinking, where can we go for 10 days?

I must first say that, this would have been an expensive trip if we did not have frequent flyer points to utilize so this is little adventure to Europe could only happen because of our bank of frequent flyer points.

We fell in love with roasting with milk when we roasted pork and potatoes. Then I found that you can brine with milk and achieve the same moist result with meat as a water brine so it got me Googling….and I found a recipe for brining turkey in milk. Well since chicken is still a bird, I thought I would first try this recipe with chicken.

My first experience was ok, the meat was extremely salty (great to use in a salad) and the skin browned far too quickly (I was warned that milk brine causes the meat to brown quicker than usual), this nearly burnt! Continue Reading…

San Sebastian was breathtaking, we thought, how can this be beaten? We did not really have any expectations of Malta so let’s go…. Next stop, Malta it is! Our adventures were clearly not over yet….. 

Flying to Malta from San Sebastian was a little cumbersome but options were limited so there is not much you can do about that. First to Barcelona, then check in again to another flight to Malta. When we arrived it was nearly midnight, with a plane load of people all scrambling for taxis at the same time, it seems a bit messy at that time of the night. However, they do have a taxi booking counter which seemed to run like clockwork. Soon, we arrived at our hotel, right on the water at St Julian’s, the Carvalia Art Hotel. Continue Reading…

When I say “nailed it”, we like really spicy and punching above it’s weight with flavor at the same time. I have made two different batches to accommodate my non chilli friends, so I used the same recipe just with half the amount of fine white pepper and no chilli flakes or chilli powder at all. The other ingredients definitely have enough flavour punch to hold their own.
